Cold Avocado Soup

Ingredients

1 large
avocado
1/2 c
half and half
1.5 c
chicken broth, chilled
1 Tbsp
lemon juice

Step-By-Step

1Pit and peel the avocado, then cut into chunks.
2In a blender, whirl the avocado, half and half, broth and lemon juice until smooth.
3To prepare in a food processor, whirl the avocado with the half and half until pureed then add the broth and lemon juice and whirl until smooth.
4Ladle the soup into wide shallow bowls.
5Garnish each portion with chives, if desired.
