Brownwoods Cream of Broccoli Soup

Brownwood restaurant in Torch Lake was famous for their homemade soups. Unfortunately, they are no longer open. This was one of our favorite soups that they made.

Ingredients

3 bunch
broccoli
2 lb
ham, chunked or bite size pieces
2 medium
onions, chopped
1 qt
cream
1 gal
chicken stock
1 c
oil
1 c
flour
salt & white pepper
1/2 c
parmesan cheese
1/2 c
parsley flakes

Directions Step-By-Step

Combine chopped broccoli with chicken stock & boil until tender.
In sauce pan, saute ham & onions until onions are transparent. Add ham & onions to soup.

In another sauce pan, heat oil & add flour, whisking constantly, until a medium paste is prepared (roux).

Add cream to soup. Add roux to soup, stirring continuously until desired thickness is reached.
While stirring, add 1/2 cup Parmesan cheese.
Add spices to taste & parsley to garnish.
