Ingredients

1 1/2 lb broccoli, fresh
2 c water
3/4 tsp salt
1/2 c cornstarch, mixed in 1 c. cold water
1 pt half and half
1 lb velveeta, cubed
1/2 tsp pepper

This soup is creamy, rich and filling. Perfect for cool weather, too!

 

Directions

Steam or boil broccoli until tender. Remove from heat, drain and set aside.

In heavy-bottom pot, combine half and half and 2 c. water. Add Velveeta, salt and pepper. Heat over medium heat until cheese is melted.

Stir in cornstarch and water mixture slowly. Simmer until soup thickens. Add cooked broccoli, stirring gently until all combined. Serve hot and just look how happy it makes your family!

Do you just pour this mixture over the broccoli?

You stir in the cooked broccoli in step 3 after it is all thickened. Thanks for bringing this to my attention. I have alredy submitted the correction.
