This is my youngest daughter's FAVORITE comfort food! We like things a bit spicy in our house so I always use hot sausage and add fresh chopped jalapenos.

Ingredients For shelby's tex-mex chowder

  • 1 lb
    pork sausage
  • 1 sm
    onion
  • 2 clove
    garlic
  • 4 c
    milk
  • 2 can
    cream of chicken soup
  • 2 can
    yellow and white corn
  • 2 can
    rotel
  • 1 can
    green chile
  • 2 c
    monterey jack cheese

How To Make shelby's tex-mex chowder

    Cook sausage, onion and garlic until sausage is no longer pink. Drain Fat from Pan.

    Stir in Milk, cream of chicken soup, corn, Rotel, Green Chiles. Bring to a Boil. Reduce heat and simmer (stirring frequently) Uncovered for 20 minutes.

    Right before serving add the shredded Cheese. Enjoy!!
