PAUL's Story

My Mother Was A Cook And She Used To Make The Best Chili Ever. This Is As Close As I Can Come To Making Her Chili. I Hope Everyone Will Enjoy This Recipe Too! It's Easy To Make And So Good, And This Is Santa's Favorite Chili Here At The North Pole!

1 1/2 lb
1 large
onion, diced
3 large
celery stalks or 1/4 tsp. celery salt
3 can(s)
14.5 ea. diced or stewed tomatoes
2 can(s)
16 oz. dark red kidney beans
2 Tbsp
brown sugar
1 or 2 medium
green peppers, chopped
1/2 Tbsp
black pepper
1 Tbsp
1/2 tsp
1 can(s)
27 oz chili beans in chili sauce mild sauce or hot
1 can(s)
10 3/4oz tomato soup
1/2 tsp
red pepper (optional)
1 Tbsp
chili powder

Directions Step-By-Step

Melt butter in deep pan & brown onion, celery & green pepper. Add hamburger, brown meat. Drain off grease. Add 1/2 tomatoes and simmer 1/2 hour. Mix in rest of ingredients and simmer 1 hr. more.
comment: Put kidney beans & chili beans in the last 45 min. of simmering, to keep from over doing them. One other thing if you like it hotter! Add tabasco sauce to taste.
Note: I use 3 stalks celery but you can use 4-6 also I do not use the red pepper in mine because my wife doesn't like it too hot.

Your welcome Vicki, it is a mild chili and the brown sugar is the key. That is what cuts the acid that gives me heartburn, it really works. Enjoy!!!

This Chili always seems to be the Best the next day too, so if you can keep from eating it all the first day, warm some up the next day.
