Creamy Chicken Potato Soup

This is a hearty soup to serve on a cold day especially when out skating or making snowmen.

Ingredients

1 large
onion chopped
2 Tbsp
butter
3 c
chicken broth, low salt
2 medium
potatoes cut in 1/2 inch cubes
1 1/2 c
diced cooked chicken breast
1/4 c
flour
1 c
2% milk
1 c
evaporated milk
1 Tbsp
each of parsley and chives chopped

Directions Step-By-Step

In large saucepan saute onion in butter until tender stir in broth and potatoes, bring to a boil, turn down heat, cover and simmer for 15 minutes or until taters are tender,,,stir in chicken.

In small bowl combine the flour and milk and whisk until smooth, pour into pot and add the evaporated milk...bring to a boil and stir for 2 minutes until thickened..Sprinkle with parsley and chives when serving.
