Ingredients

2 Tbsp
olive oil
1
yellow onion, diced
2
carrots, chopped
1
red bell pepper, diced

plum tomatoes chopped
1
zucchini, cubed

garlic cloves, minced
8 c
chicken broth
15 oz
chickpeas
3 c
chicken breasts, cooked and cubed
2 tsp
salt to taste
1/2 tsp
pepper to taste
1/2 c
small pasta
1/2 lb
green beans
1 c
green cabbage, chopped
2 c
fresh spinach leaves
8
basil leaves
3 Tbsp
oregano
1/2 c
grated parmesan cheese

Step-By-Step

1Heat olive oil in a large saucepan over medium heat.
2Add the onion and cook, stirring often, until the onion is translucent.
3Add carrots, bell pepper, tomatoes and zucchini and cook, stirring occasionally until vegetables are soft and lightly browned.
4Add garlic and cook 1 minute longer, be careful not to brown garlic.
5Add broth, chickpeas, chicken, salt and pepper and bring to a boil over medium heat.
6Reduce the heat to low and simmer uncover for at least 1 hour.
7Add pasta, green beans and cabbage, bring a boil and simmer for 10-15 minutes.
8Stirring occasionally.
9Stir in spinach, basil and oregano and simmer for 10-15 minutes, until pasta is done.
10Top with some grated parmesan cheese.
11Serve with crusty bread.
