| 4 | boneless skinless chicken breasts |
| 2 bx | chicken stock or broth |
| 1 can(s) | ranch style beans |
| 1 can(s) | black beans |
| 1 can(s) | corn (or i use a small package of frozen) |
| 1 can(s) | green chiles, mild (7 oz) |
| 1 c | roasted red peppers, diced (i just use the store bought jar) |
| cayenne pepper | |
| cumin | |
| salt and pepper to taste | |
| pepper jack cheese | |
| tortilla chips | |
| sliced avocado (optional) | |
| green onions, chopped for garnish (optional) |

Directions
Season chicken with cumin, salt, and pepper. Put in 350 degree oven to roast until fork tender. I put some of the broth in the pan, but you can also use water.Let cool enough to shred or cut into cubes, then put the shredded (or cubed) chicken in a soup pot on the stove. Add the broth, beans, corn, green chilies, and diced red peppers.Season the soup with more cumin, cayenne, and salt and pepper to taste. Simmer over medium high heat for about 30 minutes until flavors meld together. NOTE: This should be a very thick soup, so if it's too "watery" you can add some crumbled tortilla chips and pepperjack cheese to thicken.Ladle into soup bowl and garnish with cheese, sliced avocado, and green onion. Serve with tortilla chips...and enjoy!

Laurie, I have looked on several recipe sites for this recipe and I will tell you, yours sounds the best of all. I plan to make this today. It would be a great (break) food from all the Christmas foods. My great niece and nephew are coming from Key West and they want to see SNOW !!! And, there is actually SNOW in the forecast this weekend. This would be a great dish for the cold temps...Thanks Dear !!! CHEERS !!! Jewel

Thank you Jewel and Wendy! I'm flattered! I sure hope you like it as much as I do. I haven't made it in awhile and it is making my mouth water thinking about it, so I believe I will be making it again soon myself! Jewel - this would be so tasty with that snow and cold temps you will be getting. I wish we were getting snow for Christmas, but it looks like it's just rain, rain, rain for us here in Seattle.

Haha Lynn! I was just looking at your plethora of chocolate recipes that I am dying to try...then I saw the one with the mashed potatoes that you just got YOUR blue ribbon on...congratulations to you too!! Besides being a chocoholic, I also LOVE potatoes. I have made mine similar to yours, but like others have also said...never with the evaporated milk. I am making some ribs for dinner tonight and I'm thinking this may just be the side dish that will accompany them.

I made this for dinner last night. I have to admit I was a little leery of how it would turn out since it was sooo easy to make. (I made it even easier by steam-microwaving the seasoned chicken). But this recipe just proves it doesn't have to be hard to be good. My family loved it too and this is definately going to be a regular on the menu. BTW, since it is so low in fat I felt free to add a little extra olive oil and still had a wonderful healthy meal! Thanks for sharing this!
