Ingredients

8 lb
chicken bones, chopped in half to expose the marrow
1 large
onion (unpeeled) quartered
2 large
carrots, quartered
4 ribs
celery (leaves & all) quartered
4 whole sprig(s)
parsley
2 whole sprig(s)
thyme
8 whole
black peppercorns
3 whole
cloves
1
bay leaf
1 clove
galic, smashed
5 qt
cold water

Step-By-Step

1Dump all the ingredients in a large dutch oven
2Bring to a rolling boil over high heat
3Lower heat to slow simmer
4Simmer slowly for 4 hours
5Strain in a cheesecloth lined colander
6Cool to room temperature
7Store in tightly sealed mason jars in the fridge (Keeps about a week)You should get a yield of about a gallon
