I'm a big fan of chicken tortilla soup, but most all of them are tomato based. This soup is cheese based and better than any tortilla soup I have ever made. The inspiration for this soup came from a Chicken tortilla soup at The Yard House restaurant that I fell in love with and couldn't find a recipe for.
bear creek tortilla soup mix
shredded triple cheddar cheese
rotisserie chicken, chunked
1Bring the chicken broth and water to a rolling boil. Whisk in soup mix. Reduce heat to Medium and simmer uncovered 15 minutes, stirring occasionally.
2Add sour cream and both packages of shredded cheese slowly (stirring after every hand full)
3Add rotisserie chicken.
4Salt and pepper to taste.
5Serve in a soup bowl over tortilla chips.
