I love this recipe! I can clear shelves in my pantry, substitute different beans, add fresh tomatoes or a different color of bell pepper. Make this Taco Soup as hot or as mild as your family likes! You can even substitute ground or chopped chicken and chicken stock for the ground beef and beef stock, or leave out the meat, and add more vegetables and vegetable stock for a vegetarian option! You can even make this in the slow cooker....after step one, put everything in the slow cooker, set the timer for 7-9 hours on low or 3-4 hours on high and you are ready to go!

Ingredients For taco soup

  • 1 Tbsp
    canola oil
  • 1 md
    sweet or yellow onion , chopped
  • 1 lb
    ground beef
  • 1/2 lg
    red bell pepper, chopped
  • 1 pkg
    taco seasoning mix
  • 1/2 tsp
    garlic powder, or to taste
  • 1 can
    chopped tomatoes (16 ounces)
  • 1 can
    chili beans, hot or mild (14-16 ounces)
  • 1 can
    white beans, drained and rinsed (14-16 ounces)
  • 1 can
    chopped green chilies (4-5 ounces)
  • 3 c
    beef stock or broth
  • 1 1/2 c
    tomato juice or vegetable juice

How To Make taco soup

    Place oil in Dutch oven (or large saucepan) over medium high heat, add onions and sauté for 5 minutes. Add ground beef, breaking up meat into smaller pieces. Brown ground beef for 5 minutes and then add bell pepper. Sauté mixture until ground beef is completely cooked.

    Sprinkle taco seasoning and garlic powder over ground beef mixture. Stir into meat mixture well and continue to cook for 1 – 2 minutes to release the flavor in the seasoning.

    Add tomatoes, chili beans, white beans, chilies, beef stock and juice.

    Bring to a boil and reduce heat to low. Simmer over low heat for 1 – 2 hours to blend flavors. Taste of additional seasonings.

    Serve garnished with chopped scallions, shredded cheese and sour cream. Instead of crackers, serve with tortilla chips.
