Potato and Beef Sausage Soup

This is my version of potatoe soup with my favorite beef sausage.

Ingredients

4-5 slice
bacon
1 medium
carrot, shredded
1 medium
celery stalk chopped
1 medium
onion chopped
2 clove
garlic choppedt
5 medium
russet potatoes peeled and cubed
1 pkg
gilbert's beef and bleu sausage
3 Tbsp
flour
2 c
chicken broth
3 c
water
1
bay leaf
1/2 tsp
thyme, dried
1 tsp
coriander
1 tsp
black pepper
1/2 c
sour cream

Step-By-Step

1In a large pot cook potatoes until just tender drain and set aside. Slice sausages into 1/4 inch slices.
2In an Dutch oven cook bacon until crisp, drain on paper towel.
3Heat 3 tbsp of the drippings add onions, carrots.and celery. Cook until tender. Add garlic salt and pepper. Stir in flour and cook for1 minute.
4Stir in chicken broth and water until slightly thicken. Add bay leaf, thyme, coriander and black pepper. Stir and bring to a boil.
5Lower heat to simmer add potatoes and sausages. Simmer until potatoes are soft and sausages are cooked. Stir in sour cream.
Top with bacon and cheese
