This is an easy, delicious one-pot meal that's great for a cold winter day or a potluck! This can also be made in a Crock Pot and brought to the office.

This soup has a different taste than the other taco soup recipes we've tried over the years. We think it is the cilantro - added in just the right amount - that makes it extra special. Hominy as an ingredient is also a nice touch. A super simple and satisfying soup recipe.

Ingredients For famous taco soup

  • 2 lb
    ground chuck
  • 1/2 c
    chopped fresh cilantro
  • 1 pkg
    Hidden Valley Fiesta Ranch seasoning mix
  • 1 pkg
    taco seasoning mix
  • 1 lg
    chopped white onion
  • 2 can
    ranch style pinto beans (15 oz)
  • 1 can
    white hominy, drained and rinsed (15.5 oz)
  • 1 can
    fiesta corn, drained (15.25 oz)
  • 1 can
    Rotel (10 oz)
  • 1 can
    diced tomatoes (14.5 oz)
  • 1 Tbsp
    cumin
  • 1 tsp
    garlic powder
  • 2 c
    water
  • salt and pepper, to taste
  • sharp cheddar cheese (optional)
  • sour cream (optional)
  • diced green onion (optional)
  • tortilla chips (optional)

How To Make famous taco soup

  • Browning meat and onions in a Dutch oven.

    Brown ground meat with the onions. Drain.
  • Remaining ingredients added to the Dutch oven.

    Add the rest of your ingredients and bring to a boil. Turn heat to a simmer uncovered for an hour.
  • A bowl of Famous Taco Soup with cheese sprinkled on top.

    Serve with sour cream, tortilla chips, and sharp cheddar cheese, and dices green onion on top.
