White Bean Spinach Soup

This soup is so good with a nice crusty bread. I have shared it with many friends and they all love it.

Stove Top

Ingredients

1 medium
chopped onion
2 large
links itialian sausage ( casings removed)
1 medium
chopped celery
1 clove
minced garlic
2 can(s)
cannellini beans. do not drain
2 c
chicken broth
pinch of salt, thyme and pepper
10 oz
fresh spinach leaves
1 c
ditalini (small tube pasta.
grated parmesan cheese

Directions Step-By-Step

Saute the onion, sausage and celery inoil until tender; add minced garlic and saute for 3o seconds more. Add the beans, broth and spices. Simmer for 15 minutes. Stir in spinach and cooked pasta and cook just until the spinach is wilted about 1 minute. Top with fresh grated parmasan cheese and serve with crusty bread. Delicious!!!
