So simple, yet so yummy. Great served w/ a loaf of italian bread!

Ingredients

2 tsp
minced garlic
1 Tbsp
olive oil
2
leeks, sliced

14 oz cans chicken broth
2 c
water
1
15 oz can navy beans, drained
1 tsp
dried thyme
4 oz
linguini, broken into small pieces.
1 lb
medium shrimp, peeled, deveined
4
plum tomatoes, chopped
1 c
fresh baby spinach leaves.

Step-By-Step

1In 4-quart dutch oven, cook garlic in oil for 15 seconds, or until fragrant. Add leeks, cook until tender.
2Add broth, water, beans and thyme. bring to a boil. Add linguni and simmer, uncovered for about 10 mins.
3Stir in shrimp. Simmer until shrimp is pink. Place soup into bowl and add tomatoes and spinach. Stir.
