Ingredients For seafood minestrone

2 tspminced garlic

1 Tbspolive oil

2leeks, sliced

214 oz cans chicken broth

2 cwater
-
115 oz can navy beans, drained

1 tspdried thyme

4 ozlinguini, broken into small pieces.

1 lbmedium shrimp, peeled, deveined

4plum tomatoes, chopped

1 cfresh baby spinach leaves.
How To Make seafood minestrone

1In 4-quart dutch oven, cook garlic in oil for 15 seconds, or until fragrant. Add leeks, cook until tender.

2Add broth, water, beans and thyme. bring to a boil. Add linguni and simmer, uncovered for about 10 mins.

3Stir in shrimp. Simmer until shrimp is pink. Place soup into bowl and add tomatoes and spinach. Stir.
