Red Lentil Soup

Ingredients

1 Tbsp
oil
2 medium
onions, finely chopped
1/2 lb
red lentils
6 c
beef stock
1 tsp
paprika
1
bay leaf
1/2 tsp
salt
1/8 tsp
pepper
1 tsp
mint, dried
1 tsp
parsley, dried flakes

Step-By-Step

1In a large soup pot, saute oil and onions.
2When onions are soft, add lentils; stir several minutes.
3Add remaining ingredients; bring to a boil.
4Simmer until lentils are very soft, about 35 minutes; soup may be pureed.
