Ingredients For pressure cooker cabbage, bean & kielbasa soup

  • 2 Tbsp
    olive oil
  • 1 md
    onion, chopped
  • 1
    rib celery, chopped
  • 1 clove
    garlic, minced
  • 4 c
    chicken stock or broth
  • 6 c
    green cabbage, thinly sliced
  • 8 oz
    kielbasa, cut in half lengthwise and then cut into 1/4 inch slices
  • 1 can
    14.5 oz. can whole tomatoes, drained an chopped
  • 1/2 tsp
    dried thyme
  • 1/2 tsp
    salt or more to taste
  • 1/4 tsp
    fresh ground black pepper
  • 1 c
    canned white cannellini beans, rinsed and drained

How To Make pressure cooker cabbage, bean & kielbasa soup

    In a 6 qt. pressure cooker, heat the oil over medium heat. Add onion, celery and garlic and stir often until just softened, about 3 minutes.

    Stir in chicken stock or broth, cabbage, sausage, tomatoes, thyme, salt & pepper.

    Bring pressure cooker to pressure and cook 5 minutes. Use quick release to relieve pressure.

    When pressure has been released, open lid and stir in beans and let them cook through. Season with additional salt & pepper to taste.
