This is my original recipe based on flavors so favored in France. It's basically vegetarian but chicken certainly may be added if you like.

Ingredients For diabetic french country bean soup

  • 2
    small to med onions
  • 2
    carrots
  • 2 Tbsp
    olive oil, plus extra for drizzling
  • 3-4
    ripe tomatoes
  • 1 clove
    garlic, chopped
  • 1 md
    bay leaf
  • 1 tsp
    dried thyme
  • 2 can
    (15 oz) cannellini beans or home cooked
  • salt and freshly ground black pepper to taste
  • a few slices of orange peel. pith removed
  • 1/4 c
    flat leaf parsley leaves. left whole
  • 4 c
    vegetable broth or fat-free, reduced sodium chicken broth
  • 1/4 c
    cooked chicken cut in bite-size pieces(optional)

How To Make diabetic french country bean soup

    Roughly chop the onions and carrots. Warm the olive oil in a large pan on a low heat and add the onions, carrots. Saute for 5 mins on medium low. Chop the tomatoes and garlic, add them to the pan with a bay leaf and thyme.

    Add the cannellini beans, followed by the stock. Add the strips of orange peel at this stage Simmer until the veggies are just tender. Add the parsley just before completion as you just want it to wilt.
