Ingredients For chicken black bean soup

2 canblack beans, canned

1 cancream of chicken soup

1large onion, chopped coarse

1 Tbspminced garlic

1 candiced tomatoes

1 ccooked chicken thigh meat, shredded

1 cwater
-
1/2 cmilk
-
1/2bunch of cilantro, chopped fine
How To Make chicken black bean soup

1In a large pot, combine black beans, onions, cream of chicken soup, water, tomatoes and milk. Bring to a boil, stirring frequently then reduce to simmer for 20 mins.

2Add garlic, chicken and cilantro. Simmer uncovered for another 20 mins. or until soup has desired thickness and onions are clear.

3Best to set aside overnight in fridge to let the flavors marry up. Reheat and serve with a dollop of sour cream. A pan of cornbread works really well with this!
