I had a dream. This is what it was. Crunchy Sweet Salty Buttery. This is the best treat it is great for snacks at parties or to put in your car and don't tell anyone(as a friend told me he was doing. I have been making this for several years. We had a catering business at the motorcycle races. I sold this by the tons and then again every year for fund raising for different projects. So many people want this recipe. Here it is:

Ingredients

1 c
sugar
1/2 c
corn syrup, light
1/4 c
water
2 Tbsp
unsalted butter (melted)
1 tsp
baking soda
1 pkg
1-11 oz bag of reg corn chips(not tortilla chips)
FRITTLE INGREDIENTS

Directions Step-By-Step

1
Prep:What you will need:
1 4to5 qt heavy deep pot,candy thermometer,2 greased (with butter)cookie sheets,2 forks.
2
Get all ingredients together. Melt butter in a small dish, put baking soda in another small dish, open corn chips(11oz). Put thermometer on side of pot, put in water sugar and corn syrup stirring constantly.Heat to 300.
3
As soon as it gets to 300 take out thermometer and add butter stir. It will start to bubble up quickly add baking soda and stir well when it gets golden brown(and it will quickly)turn off fire and add chips. Stir from the bottom to get mixture over as many chips as you can without breaking them up.
4
Turn half of mixture onto each cookie sheet. Keep turning the mixture over on its self working back and forth between the two sheets pulling the chips apart as fast as you can using the two forks back to back.Dig down into the mixture and pull apart. It will be to hot for awhile to use your hands. When cool enough to touch finish with your hands. When it is all in 1-3 chips together or small chunks/balls/finger links it is done. When cool test. Then test again and again.I sell it in 6oz and 12 oz baggies.

Thanks so much Edie. I will certainly try again! The fact that it didn't set up didn't keep me or my husband from chowing down!! It's awesome!!

Catherine I am glad you tried it and Karla said everything I would have said . You probably didn't cook your sugar long enough. It has to be exactly 300 over that it burns quickly under it doesn't set up. Hope you try it again. I used to buy the chips in 11 oz bags then it went to 9 1/2 oz and I had to measure out more chips but I didn't like any more or any less chips. Candy is pretty precise. Good luck to you both. :-)

Hi Catherine, I'm not Edie but I know if you don't cook sugar to the correct temperature it won't act like you want it to. You can check on about what will happen by having a cold cup of water and dropping a little bit into it. If it doesn't get brittle and hard in the water it needs to be cook a little longer. This is the same way you check for soft-ball stage for other candies. Using a thermometer is the most accurate way to get the correct stage of doness. Of course the themometer needs to be accurate LOL. I got the Fritos to make this last night. I'm going to make it myself today.

I hope I helped you.

Hey Edie, I made your Frittle this morning, but mine is not hardening. Just kinda tacky and stringy. Can you think of what I may have done wrong? Otherwise it's still delicious!!!
