PUTTING ON THE RITZ

I make these quite often and they are so good and easy. I first ate these at a family reunion and could not find out who made them so I looked around until I found the recipe.

Ingredients

1 c
pecans, chopped
1 can(s)
eagle brand milk
1 c
dates, chopped
1 box
ritz crackers

ICING:

8 oz
cream cheese, room temperature
1/4 c
butter, softened
1 tsp
vanilla extract
1 box
confectioners' sugar

Directions Step-By-Step

1
Cook pecans, dates and milk over low heat until thick. Cool. Put a spoonful on each cracker. Place on a cookie sheet and bake for 8 min. at 350 degrees. Cool.
2
ICING: Mix cream cheese, butter, vanilla and confectioner's sugar until smooth. Blend well. Ice every cracker. I make one stripe down each cracker. This makes them look prettier but you will have some icing left-over. I also rather use Town House Original Topper crackers because they have an indentation on top.
