This is my mother's version of Pimiento Cheese Spread. Just serve with your favorite crackers. This can also be frozen ahead of time then thawed in the fridge the day before a holiday or picnic/cookout.

Notes from the Test Kitchen:
I would never thought that adding sugar to pimento cheese would be so good! This one will really be a hit at your next party or tailgate.

Ingredients

1 lb
velveeta cheese
1 lb
medium cheddar cheese
1 lb
sharp cheddar cheese
1 pt
miracle whip salad dressing
8 oz
pimento, drained and chopped
3 Tbsp
sugar
***
salt and pepper to taste

Directions Step-By-Step

Grate cheeses or cut into small pieces. Allow to soften at room temperature.

Combine all ingredients and blend by using mixer, blender or food processor. (It may be necessary to divide ingredients into two batches unless you have a very large mixing container.)

Store leftovers in fridge. Can be frozen. Yields: 2 quarts.

Everyone has a choice. To use sugar or a sugar substitute or no sugar. For what ever their reason. My choice is to substitute sugar when I can. My reason is so that I can enjoy a glass of wine (400 calories) with dinner. You can be certain though I will using real sugar in this recipe along with a glass or two of wine. I will toast the Blue Ribbon winner and also y'all. Stay healthy.

This recipe is the "bomb"...I just made it....I cut it down as I did not need 2 qts of it....I used 8oz Velveeta, I only had shredded, sharp cheddar cheese, and I just dumped some in...Instead of sugar , I finely grated 2 small sweet pickles in it...I just used enuf Miracle Whip to get it to the consistency that I like...I used 4oz of chopped pimento, a little Kosher salt and freshly ground pepper....Best I have ever tasted...
