My neighbor Susie, who according to my grand daughter has the most awesome garden had sent over some zuchinni and tomatoes so me and my grand daughter decided to use them for dinner that night.
diced tomatoes or 3 fresh diced tomatoes
3 or 4
zuchinni, sliced then quartered
salt and pepper to taste
parmesan cheese grated
mozzarella cheese shredded
1cook pasta according to directions, drain , rinse and set aside.
2heat olive oil in a pan then add chopped zuchinni, and cook a few minutes, add basil,sazon, salt & pepper.
cook until zuchinni is tender but not mush.
3add tomatoes and cook about 5 to 10 minutes, add butter and cook a few minutes longer, the butter thickens the sauce.
4add pasta and mix well.
serve with a little parmesan and or mozzarella cheese
