Summer is coming and this is not just a great way to use some of that zuccini but it is easy to make and very good.

Ingredients

3 c
sliced zuccini
3 c
sliced onions
3
eggs
1/4 c
butter or margarine
1/4 c
milk
1 c
shredded swiss cheese
1 tsp
salt
dash
pepper
1/2 tsp
dry mustard

Step-By-Step

1Saute' onions and zuccini in butter until tender. Place in buttered cassarole dish. Whip eggs, seasonings, milk, and 1/2 cheese, pour over top and sprinkle the rest of the cheese over the top. Place in 375 degree oven for 20 minutes
