Now that zucchini is so prolific in our area, we enjoy eating this side dish frequently. I have been using this recipe for so long that I can't remember where it came from and it is an easy and fast side dish. You can certainly spice it up for your family's tastes using oregano or Italian spices as well.

1/3 call purpose baking mix

1/4 cparmesan cheese

2eggs
-
2 cshredded unpared zucchini

salt and pepper to taste

2 Tbspbutter
How To Make zucchini rounds

1COMBINE BAKING MIX, CHEESE SALT AND PEPPER.

2STIR IN EGGS UNTIL MOISTENED. FOLD IN ZUCCHINI.

3DROP 2 TBSP. OF MIXTURE IN BUTTER AND FRY FOR 2-3 MINUTES ON EACH SIDE.
