These are like silver dollar pancakes. I use 1 Tablespoon butter to fry the 1st batch and the 2nd for the balance. I use a 12 inch frypan and make 5 to 6 at a time. I use a Serving Tablespoon to drop the rounds. Makes 10 to 12 small flat cakes.
Mix all ingredients in bowl (except the butter) until well combined. Heat frying pan or griddle like you would for pancakes. Drop rounds in hot butter and fry until brown on bottom, flip and brown. Serve warm. I would experiment with these, they might be good with a little syrup or sour cream. I like them just fine plain.
