All the yum, none of the hassle! This is a wonderfully flavorful crustless quiche - Definitely worth a try.

Ingredients

3 c
chopped zucchini
1/2 c
chopped onion
1/2 c
shredded cheese (cheddar, mozzarella, etc.)
1/2 c
grated parmesan cheese
1 c
Bisquick

eggs, slightly beaten
1 tsp
salt
1/2 tsp
pepper
1 tsp
garlic powder
1/2 c
oil

Directions Step-By-Step

Mix Bisquick, zucchini, oil, eggs, onion, parmesan cheese, cheddar cheese, salt, pepper, and garlic powder in a large bowl, until it looks like thick batter. Mix by hand. Do not beat.

Pour into a greased pie plate.

Bake at 350 degrees for 40 minutes.
