zucchini, grated and drained
1/3 c
parsley, chopped
1/4 tsp
dried dill
1/4 tsp
dried mint
1/2 tsp
onion powder
1/2 tsp
garlic powder
1/2 tsp
salt
1/2 tsp
ground black pepper
1/2 c
all purpose flour

egg
2 Tbsp
olive oil, extra virgin

TZATZIKI

single serving container of yoplait greek yogurt or your favorite plain yogurt

baby cucumber, grated and drained, or about 1/4 cup grated, drained cucumber
1/8 tsp
dried dill
1/8 tsp
garlic powder
1/8 tsp
salt

Directions Step-By-Step

Mix the zucchini, chopped parsley, herbs, egg, salt and pepper in a bowl. Slowly add flour, mixing to batter like consistency.

Heat the olive oil in a pan.

Spoon 2-3 Tbl of the zucchini mixture into the pan, spreading slightly to flatten. Cook until golden brown on both sides, about 4 minutes per side.

To make Tzatziki sauce, mix yogurt, cucumber, dill, garlic powder and salt well.
