I gave this recipe to the brothers who own Black-Eyed Pea and they have used it since the 70's!

Notes from the Test Kitchen:
Ever had squash French Toast? Me either! Strange as the recipe may sound, this is a real delight. It's great for a sweet tooth and may just make a squash fan out of your entire family.

3 c
cut up yellow squash (in medallions)
1 c
torn up old potato bread
2
eggs
1/2 c
brown sugar, firmly packed
1/2 tsp
salt
3/4 c
milk

Step-By-Step

1Preheat oven to 350.
2Clean, slice and arrange yellow squash in a sprayed (PAM) or greased 9 X 12 glass pan
3Mix potato bread with brown sugar and sprinkle over entire dish
4Whip eggs and milk together and pour over squash and bread/sugar mix
