We like this dish with steak. It's not healthy by any stretch of the imagination, but good things usually aren't. My daughter says I'm the only one who can take something so healthy and make it so UNhealthy.lol.
Cook frozen veggies according to package' drain, leaving just enough water to cover bottom of pot.
Place veggies in a square baking dish, top with velveeta slices. In a microwaveable bowl, melt butter, crumble Ritz crackers into butter & mix well, coating crackers with butter.Spread over the veggies & cheese. Bake at 350 degrees for 15-20 mins.
