|4 large||tomatoes skin on sliced a little over an 1/2 inch thick|
|1/2 c||ricotta cheese|
|1 c||mozzarella cheese shredded|
|1/2 c||parmesan cheese|
|1/4 c||good mayonaise|
|salt and pepper to taste|
I GOT THIS RECIPE OUT OF AN OLD MAGAZINE AND TRIED IT. I THOUGHT MY SON WAS GOING TO EAT ALL OF THEM BEFORE DINNER. IT MAKES STORE BOUGHT TOMATOES GREAT. I AM NOT BIG FAN OF STORE BOUGHT TOMATOES BUT WAS PLESANTLY SURPRISE WITH THIS ONE.
When I read this recipe I knew I would like it. As it turns out, we ALL loved it (even my mother-in-law who is hard to impress!) The sweetness of the tomato and the creaminess of the cheeses is a perfect combination. You can bet I will be making these again!!
SLICE TOMATOES AND PLACE ON AN SPRAYED BAKING PAN(ONE WITH SIDES)SALT AND PEPPER TOMATOES TO TASTE.
IN A BOWL MIX CHEESES AND MAYONAISE. PLACE ONE TEASPOON OF MIXTURE ON A SLICE OF TOMATOE.
BAKE TILL BUBBLEY. AROUND 10 TO 15 MINUTES
