I tried this when I was tired of canning .. worked out great.

Ingredients

4 to 5 medium
tomatoes
10
fresh basil leavs chopped
1/2 c
green onions chopped
1
9 inch pie crust
1 c
grated mozzarella cheese
1 c
grated cheddar cheese
1 c
mayo/ or ranch dressing use 3/4 c.. i have used ranch dry pck with sour cream and it is very good too
salt & pepper to taste use a lot

Step-By-Step

1Pre bake crust .. Preheat oven to 350 degrees
Place the tomatoes in a colander in the sink in 1 layer
Sprinkle with salt and allow to drain for about 1 hour

2Layer the tomato slices, basil and onion in the pie shell
Season with salt and pepper

3Combine the grated cheese and mayonnaise together in small bowl.Spread cheese mixture on top of the tomatoes and bake for 30-40 minutes or until golden brown
Cut into 8 slices and serve warm
