Sun dried Tomato Quinoa

- 1 tsp
- olive oil
- medium onion, cut in half then sliced
- 2 clove
- garlic, minced
- 1/2 c
- sun dried tomatoes, dry packed, julienned
- 3/4 c
- quinoa, dry
- 2 1/2 c
- vegetable stock (or other stock) you might need more
- salt to taste
- pepper to taste
1Add oil to the pot and add onion. Cook until transparent.
2Add the garlic and cook just until you smell the garlic.
3Add everything else and cook 15-20 minutes until the quinoa is light and fluffy and you can see the white part (the germ?) starting to unravel from the inside.
4Season with salt and pepper to taste and serve.
