Good, quick recipe to use all those summer squash!

Ingredients

6-8 medium
yellow squash
1 large
onion (sliced)
1/4 c
sugar (splenda works fine)
1/4 c
oleo
1/4 c
water
1 tsp
salt
3/4 c
cheddar cheese, grated
1 can(s)
french fried onions

Step-By-Step

1Cook squash and onion with sugar, oleo, water and salt until squash is tender (drain if all water is not cooked out).

2Alternate with cheese in casserole. Bake at 350 degrees for 20 minutes.

3Just before serving, add the French fried onion to top. Place back in oven for about 15 minutes. Serve while hot.
