Squash Croquettes

2 c grated squash or zucchini
1 egg
1/2 c flour
salt and pepper to taste
1 small onion, chopped fine

This cooking method really brings out the natural sweetness of the squash without weighing it down with a ton of oil.

Directions

Squeeze as much liquid out of the squash by wrapping in a tea towel and ring out.

Mix all ingredients well and let set for about 5 minutes.

Heat a skillet over medium heat and add small amout of oil or use cooking spray.

scoop about 1/3 cup in to the skillet and gently flatten to about 1/2 inch thick.

Cook on both sides until center is set and outside is golden brown.

I made this, but I added pancake mix instead of flour and 1 tsp baking powder....wow! Mixed zucchini and yellow squash - they disappeared so FAST!!!

I am always looking for new and flavorful ways to prepare squash. These croquettes look wonderful, and I am looking forward to trying them very soon. Thanks for posting this recipe, Deborah!

They freeze well. I let them cool and then put in a ziptop bag. To reheat, I thaw and then heat in a skillet with a little oil or cooking spray.

Oh Boy! Can't wait to use my fresh zuchini on these. I'm thinkin' for breakfast as well! I'm going to use white whole wheat flour to make them healthier and stay in my eating plan.
