Spiced Cucumbers

This recipe was given to our family by our neighbor and friend, Mrs, Winifred Ramey.

whole ripe cucumbers
1 1/2 c
sugar, granulated
2 c
white vinegar
1 tsp
1 Tbsp
whole cloves
2 Tbsp
cinnamon bark
1 Tbsp
white mustard seed

Directions Step-By-Step

Cut cucumbers into slices one inch thick or in lengthwise strips. Place in a bowl and sprinkle with 1/2 cup salt. Let stand overnight. Drain and wash in cold water. Mix the sugar, vinegar and spices and boil for five (5) minutes. Add cucumbers and cook mixture slowly until tender. The cucumbers should be clear in appearance when done. The liquid should be the consistency of a medium thick syrup. Pack into clean, hot jars and seal immediately.
