Sauerkraut Salad-ON A HOT DOG, Mom's Recipe

This is one of those salads that you might turn your nose up at, however, it is a great change and can be used to top a hot dog, or served with a corned-beef sandwich or as a side dish for other meals.

I am posting it 1/03/12 as one of the groups I am participating in requires two ingredients which are in this recipe for a contest entry.

Ingredients

2 c
drained sauerkraut
4 oz
(1/2 cup) jar of roasted red peppers(for sandwich contest) or pimento; chopped
1 c
celery, sliced
1 small
onion, chopped
2 large
green peppers chopped

DRESSING:

1/4 c
water
1/2 c
oil
2/3 c
vinegar, (red wine vinegar for sandwich contest) optional: white or apple cider vinegar is fine.
1/4 c
sugar

Directions Step-By-Step

Mix these dressing ingredients together until sugar is dissolved. Pour over the five vegetables listed and cover tightly. Refrigerate overnight. Drain before using.

Top a steamed or grilled hot dog with this salad and serve. It is great with a cornedbeef sandwich, and could be served with other meats as a side dish.
