8 ozbaby or cut carrots

1/4 cunsweetened apple juice or 1⁄4 cup cider

1/4 tspdried red pepper flakes

1/2 Tbspsplenda brown blend or 1 tbsp dark brown sugar

1/2 tspground ginger
-
1/2 tspground cinnamon

1/2 tspground cloves
-
1/2 tspnutmeg

1/2 tspground allspice

1 Tbspspiced rum (optional)
How To Make samhain carrots, diabetic friendly

1In small saucepan, mix carrots, apple juice or cider, pepper flakes, sugar, ginger, cinnamon, clove, nutmeg (preferably freshly ground), allspice and rum if using.

2Coat carrots thoroughly and bring mixture to low boil over medium heat, stirring often.

3As mixture thickens, begin to stir constantly, taking care not to allow liquid to scorch.

4Carrots should be crispy tender and sauce mixture should be thick coating.
