Roasted Cabbage with Minced Garlic
This a good little side dish, to enjoy with just about anything. Kids didn't like it when they were younger but love it now.
- head of organic green cabbage, cut into 1inch thick slices
- 1 1/2 Tbsp
- olive oil
- 2-3 large
- garlic cloves, minced
- kosher salt, sprinkled on cabbage
- freshly ground black pepper, sprinkled on cabbage
- spray olive oil or non-stick cooking spray
1Preheat oven to 400F and spray a baking sheet with non-stick cooking spray. Pull outer leaf off cabbage (it’s usually dirty and nasty looking), cut cabbage from top to bottom (bottom being root) into 1″ thick slices.
