This is one of those dishes that goes great with BBQ anything.

I made this last night, with BBQ-ed pork chops. Yummy!!!!!

I have also made this as a casserole and added some cheese on top….and baked it 325 for about 20 minutes.

Ingredients

1 – 16 ounce bag frozen corn
¼ pineapple syrup from canned pineapples
1 tablespoon unsalted butter
1 tablespoon green onions chopped fine
¼ each red and orange peppers chopped
1/8 teaspoon lime zest
1 tablespoon fresh ground pepper
sriracha hot sauce “optional”

Step-By-Step

1Place everything in a pot cook on low till it is all hot.
2Do not over cook the corn, you’ll want to keep the peppers tender crisp.
3When the corn is done top with hot sauce if you want a little bit of a kick.
