Parisian Mushrooms

Ingredients

1/2 lb
small mushrooms
1/2
lemon, juice only
1/2 tsp
salt
1/4 tsp
freshly ground pepper
1 Tbsp
olive oil
1 tsp
prepared mustard
1 Tbsp
fresh parsley, chopped

Step-By-Step

1Wash and trim mushrooms.
2In small saucepan, combine mushrooms, lemon juice, salt, pepper, and oil. Cover. Cook over brisk flame for 10 minutes.
3Let cool in cooking juice.
4When cold, remove mushrooms to serving dish.
5To cooking juice, add mustard. Blend well.
6Pour over mushrooms.
7Sprinkle with chopped parsley.
