Wash carrots, slice into rounds or cut into sticks. Bring water and salt to a boil in saucepan; add carrots and cover pan. Cook over med. heat until tender (15 minutes?); drain well.
Meanwhile, grate 1 or 2 tsp peel from orange. Peel orange and cut into bite-size pieces. Add orange, peel, butter and brown sugar (or honey if you like)to drained carrots. Place over low heat and stir gently until butter is melted and oranges are heated.
**NOTE**for different flavor, leave out the brown sugar/syrup/honey and instead add 2 Tbsp chopped green onion or chives.
