1eggplant

1egg
-
1/3 cmilk

1/2 tspsalt

2 clovegarlic, minced

1/2 lbmozzarella cheese, sliced

3tomatoes, canned italian-style and diced

1 tsporegano, dried
-
1 tspsalt & pepper
-
1 Tbspolive oil, extra virgin
How To Make *** mom's eggplant ***

1Preheat oven to 350 degrees F.

2In medium bowl, beat egg, milk & salt; mix well. Cut eggplant 1/4" thick. Brown in fry pan with garlic & any oil.

3Place cooked eggplant into greased casserole dish. Layer of tomatoes & cheese, then oregano, salt & pepper, then repeat all layers. On last layer pour olive oil over. Bake 30 minutes, covered. Take cover off & cook 10 minutes longer.
