Ingredients For marinated mushrooms

8 oz pkgbaby portobello mushrooms, gills & stems removed, chopped

1/4 cwater
-
1/4 c+ 2 tbsp balsamic vinaigrette dressing, divided

1 tspgarlic salt
-
1/2 tsppepper
-
8 ozmonterey jack cheese with jalapeno peppers

3 Tbspsunflower seeds, shelled, toasted

1 Tbsplemon juice
-
4scallions, sliced (both greens & whites)
How To Make marinated mushrooms

1Place mushrooms in a medium saucepan with water, 1/4 C vinaigrette, garlic salt & pepper. Cover & bring to boil on high; then boil 5 more minutes. Drain & let cool, 15 minutes.

2Cut cheese into bite sized pieces & add to medium bowl. Stir in mushrooms, seeds, lemon juice, remaining vinaigrette & scallions; mix well. Refrigerate, covered, about 4 hours.
