Marinated Mushrooms

Ingredients

1 lb
small mushrooms, cleaned
3 Tbsp
olive oil
2 Tbsp
lemon juice
1/2 tsp
salt
1/2 tsp
thyme
2
garlic cloves, chopped
black pepper
2 Tbsp
parsley

Step-By-Step

1Slice mushroom stems, leave the caps whole.
2Place in a pot with a small amount of water and cook gently for 15 minutes.
3Reserve the stock for soups.
4Combine the remaining ingredients.
5Place mushrooms in the marinade and let sit for at least 2 hours, either in the fridge or at room temperature, stirring ocassionally.
