Leila's Creamy Cucumber Salad

Received this recipe 40 years ago, and this is still my favorite way to make fresh from the garden cucumbers.

Ingredients

6 small to medium sized fresh cucumbers
1 medium onion; sliced thin or chopped
salt and pepper
c
1 c. miracle whip

Directions Step-By-Step

Wash garden fresh cucumbers under cold water to get any dirt off. Peel cucumbers. Slice onions and cucumbers and place in a large bowl. Stir together. Sprinkle a good 1-2 Tablespoons of salt over the veggies and stir well again.

Let veggies set on the counter for a good 15 minutes, then drain off the liquid that has accumulated.

Mix the Miracle Whip and black pepper (to taste) into the veggies until well mixed together, Cover and refrigerate until ready to serve. These taste better the longer they are allowed to chill in the frig.

I never measure ingredients so add more or less of anything here.
The Miracle Whip when stirring at first, seems to separate or get a bit chunky, but the more you stir, the smoother it gets.
