Kale & Cranberry Slaw

My neighbor has wonderful Kale growing in her garden and we are having fun with new fresh recipes.

Ingredients

1 bunch
fresh kale, chopped
1 Tbsp
salt
2 Tbsp
spice brown mustard with horseradish
2 pinch
black pepper
4 Tbsp
lemon juice, fresh
1 Tbsp
lemon rind, grated
1 Tbsp
dried cranberries

Step-By-Step

1Place chopped kale in large mixing bowl and sprinkle salt all over kale. Massage salt into kale and let sit for 10 minutes.
2Dressing: Mix grated lemon peel, mustard, lemon juice and fresh ground pepper in small bowl, and pour over kale. (You can substitute Lime juice and grated Lime peel if you prefer)
3Toss kale and cranberries until coated with dressing. Serve
