Ingredients

4 medium zucchini (fresh)
2 clove garlic, minced
1 1/2 Tbsp olive oil, extra virgin
1/2 c sweet corn
1/4 c parmesan cheese

Wash and slice zucchini into medium to thin slices. Set aside. Mince the garlic and toss with zucchini. Use a large pan and heat the oil just until warm, then add the zucchini and garlic. You may add salt to taste now as well. Cook over a medium heat stirring it often until the veggies are soft. Now add the corn and heat through. Remove from heat and add cheese. (We put the cheese on the table for those who want more.) That's it! Enjoy!
