Ingredients For indian stuffed peppers, diabetic

  • 4
    bell peppers
  • 1/2 tsp
    cumin seeds
  • 1 md
    onion, finely chopped
  • 1 clove
    garlic, minced
  • 2 md
    tomato, diced
  • 1 tsp
    chili powder
  • 1 tsp
    ground corriander
  • 1/4 tsp
    turmeric powder
  • 1/2 c
    green peas
  • salt - to taste
  • 1/2 c
    frozen corn (fresh corn can be used too)
  • 1/4 tsp
    garam masala
  • 1/4 c
    grated cheese

How To Make indian stuffed peppers, diabetic

    Wash the capsicum and cut the top off near the stem. Remove and discard the seeds and pith.

    Heat oil in a pan and add some cumin seeds. Saute the onions and garlic slightly till it begins to sweat.

    Next add the tomatoes along with the chilly powder, corriander powder, turmeric powder and salt. Cook for 5 minutes.

    Add the green peas and corn and mix everything together. Let everything cook for 3 minutes until all the flavors blend.

    Sprinkle the garam masala and half of the cheese. Toss everything and set aside.

    Bake the peppers in a oven pre heated to 350 for 15 minutes. Serve with chappatti bread or meal.
