Herb Fried Tomatoes

- large, ripe firm tomatoes, cut in 1/4" slices
- 1 1/2
- cups crushed herb seasoned stuffing mix
- egg, beaten
- olive oil for frying
- 2 tbs
- shredded cheddar cheese
1Coat tomato slices with stuffing mix, dip in egg & then coat again with stuffing mix.
2Heat oil in heavy skillet.(I prefer cast iron). Add tomato slices, cook until brown, turning once.
3Transfer to serving dish & sprinkle with shredded cheese or grated parmesan.
